29 Jul Easy, lightweight backpacking meal – chicken Pad Thai and veggies!
I recently had the wonderful opportunity to appear on a segment with Q13 Fox news in Seattle sharing one of my favorite backpacking meal recipes :
Chicken Pad Thai with Veggies!
Making your own backpacking meals takes only a few minutes and is a much healthier and more cost effective option than purchasing a pre-made meal at the store. By opting for freeze-dried or dehydrated options, the meal is super light and easy to carry on the trail – simply add boiling water and allow it rehydrate for about 10 minutes!
You can find most of the ingredients on Amazon, at your local grocery store or online at places like Harmony House Foods or PackitGourmet.
Here is the recipe for my super easy Chicken Pad Thai – feel free to modify the recipe and add in any vegetables that sound good to you (for the Q13 segment, I added in freeze dried peas, butternut squash and carrots!).

For me, backpacking meals are so special – not only because I’m fueling my body, but because they represent time spent in the wilderness with the people that I really care about. These are meals that I’ve eaten in some of the most beautiful places on earth – some of my happiest memories include eating a meal out of my food cozy and watching a sunset melt on the mountains around me.
